Healthy Turkey Chili


Today I'm linking up with 33 Shades of Green to share a delicious chili recipe. This is probably my most favorite chili in the world! It's flavorful, healthy, and best of all, so easy to make. I adapted a recipe I found online (I can't find the original link but when I do, I'll be sure to link back to it) by subbing the chicken with lean ground turkey breast, draining all of the beans, and adding in reduced sodium chicken broth for more flavor. I doubled the recipe so that we'd have plenty of leftovers for the week! 


Healthy Turkey Chili 
Serves 8; 7 Weight Watchers points plus per 1 cup serving 

Ingredients:
1 lb lean ground turkey breast, cooked and crumbled 
1 can black beans, drained and rinsed
1 can light red kidney beans, drained and rinsed 
1 can white corn, drained and rinsed
1 can ro-tel tomatoes with green chilies
1 onion, chopped
1 packet reduced fat taco seasoning
1 packet dry ranch dressing packet

Put all of the ingredients in a large stock pot. Cook on medium heat for 30 minutes then turn down to low and let simmer until you're ready to serve. Top with your favorite chili toppings.
