Hearty Kale and Sausage Soup

I figured that since I posted a pretty unhealthy recipe yesterday that I'd better post something a little better for you today. I found this hearty kale and sausage soup in my newest Weight Watchers cookbook, it was really simple to make and tasted delicious. A 1 1/2 cup serving is only seven points plus, we ate ours with a side of roasted garlic crackers. Give it a try, you'll love it!



Hearty Kale and Sausage Soup
Recipe via Weight Watchers

Ingredients:
1 teaspoon olive oil
1/2 lb turkey kielbasa, sliced
1 lb small red potatoes, cut into fourths
1 onion, chopped
1 tomato, chopped
2 cups reduced sodium chicken broth
2 cups water
1 teaspoon paprika
4 cups kale, roughly chopped

Heat a saucepan with the olive oil to medium heat. Add in the kielbasa and let brown, about 4-5 minutes. Remove from the pan and place onto a plate. In the same pan, mix together the potatoes, onion, tomato, chicken broth, water, and paprika. Bring to a boil, then let simmer until the potatoes are soft, about 10-15 minutes. Add in the kale and kielbasa and let simmer for 10 more minutes or until kale has wilted. Serve with crusty bread or crackers.
