Healthy Homemade Breakfast Sandwiches with Turkey Sausage, Eggs, and Cheese


My husband loves breakfast biscuits but at $4 a biscuit, it can be expensive when you get one every morning. And I'm not a fan of the ones that you buy in the frozen section, they taste so fake and processed. So when my friend Kimberly shared her homemade breakfast sandwich recipe with me, I made a batch for my husband to take to work with him this week. They're healthy, easy, and taste so yummy. I made 5 of them and wrapped them in aluminum foil and stuck them in the fridge for easy grabbing. Here's the step-by-step instructions on how to put the muffins together. Thank you Kimberly for sharing them with me!

What you need: 5 eggs, 1/4 of a green pepper (red works too), 5 slices of cheese, 5 turkey sausage patties, and 5 English muffins (if you're feeling adventurous, you can make your own English muffins--it's not as hard as you'd think!). 


Preheat your oven to 350 degrees. Whisk the eggs and mix in the peppers. 


Spray a muffin tin with olive oil and fill 5 muffin slots evenly with the eggs. Bake for 10-12 minutes or until the eggs are cooked thoroughly. 


Toast the English muffins and heat up the sausage according to the package. To assemble the sandwiches, layer the cheese then sausage then the egg muffin onto one half of the muffin. Top with the other half and eat!  



Or if you're making them for the week, wrap each sandwich tightly with aluminum foil and store in the fridge.

  1. It looks very delicious. I try this recipe tomorrow. Today I have a lot of work. My boss watching me, so I'm not bored in work ;) Maybe I should change my office job? If I was a chef I might cook at work and nobody complaint :)
